Today's Google Doodle is a delightful homage to foodies everywhere, celebrating one of the ultimate breakfast indulgences: chilaquiles. Surprisingly, I found myself whipping up this savory dish not once, but twice this week.


Crafted by Oakland-based guest artist Chava Oropesa, Google's Doodle pays tribute to this beloved breakfast staple.


Chilaquiles, at its core, is a simple yet customizable dish. Basic ingredients include fried tortilla strips or chips, enchilada sauce, cheese, and fried eggs. Layer the chips with sauce and cheese, warm it through, top with eggs, and savor the flavors. It's a quick, easy, and undeniably delicious morning treat!


Like many Mexican delicacies, chilaquiles vary in style from region to region. You can enhance your dish with avocado, guacamole, salsa, cotija cheese, jalapenos, or even slow-cooked pork or chicken. For a creative twist, consider a fusion version with green chile gravy over corn muffins instead of traditional tortillas.


If you've yet to experience the joy of chilaquiles, now's the perfect time to indulge. Opt for red or green enchilada sauce, whether from a can or made from scratch. Just remember not to overcook the eggs; the ideal chilaquiles boast perfectly runny yolks. Bonus tip: utilize leftover homemade tortillas for tacos at dinner, then repurpose them for breakfast the next day.


Although chilaquiles trace back to ancient Aztec cuisine, they gained popularity in the United States thanks to Encarnación Pinedo, known as "The Spanish Cook," in 1898. While I've sampled them in Mexico and various American eateries, I find myself most often preparing them at home.


While hash browns with runny eggs and homemade biscuits with gravy are worthy contenders for the title of best breakfast, chilaquiles hold a special place in my heart. However, I must confess a deep affection for breakfast tacos as well.
